I thought it was about time I added another of my favorite recipes. This one is a family favorite and very easy to make.
- 1 or 2 packages of sweet Italian turkey sausage (You can use hot, spicy, regular or chicken sausage)
- 2 or 3 sweet onions (or yellow onions if you prefer them)
- 1/4 to 1/2 cup water
I add a little olive oil to my pan because turkey sausage is low in fat. Cook it over medium heat until the sausage begins to brown, turning it as needed. You don’t have to cook it through, just give it some color.
Peel, halve and slice the onions.
Put the onions on top of the sausage links and add a little water to keep it from sticking. If you want more juice when it is cooked, add a little more water.
Lower heat, cover and simmer for about 20 minutes until the onions are transparent and the sausage is cooked through.
That’s all there is to it. The sausage and onion juices blend together to make a flavorful sauce. I usually serve this over rice and add a side vegetable or a salad but you can also fill subrolls with it. It’s an easy dinner when you don’t feel like cooking.
