In answer to your question, I am one of those people who believes in real eggs, milk, butter, etc.  However, this is one area that I don&#039;t scrimp because I believe there is a difference between free range, organic and cage raised.  So personally, I buy and use fresh eggs.  

However, a few years ago (yes years) I bought something called Egg Replacer.  You can find it in most health food stores.  It is basically potato starch and tapioca and will act as a thickener, binder like eggs do.   Being in Florida, I never know when something like a hurricane will wander through and disrupt my shopping schedule.  I keep this in a glass jar, on my pantry shelf for emergencies.</description>

I have started only buying a large bottle of the processed eggs with no cholesterol.  When I buy fresh eggs, some stay in the fridge so long I get scared to use them and the bottled eggs seem to work in recipes well - unless I want a boiled or sunny side up fried egg.
